Preparation Instructions: Prep: 50 minutes Chill: 60 mins Serves 12For Tiramisu Sponge you will need: 2 eggs 5 tablespoons (100mL) water 2 tablespoons (40g) melted butter 20cm square slice pan For Coffee: 1 cup (250mL) boiling water For Mascarpone: 300mL thickened cream Prepare: Preheat oven to 180C (160C fan forced). Line slice pan with baking paper.Mix: Place sponge mix, eggs and water into a small mixing bowl. Using an electric mixer, mix on low speed until ingredients are combined. Mix on High speed for 5 minutes, scraping down the sides of the bowl occasionally. Gently fold melted butter through the prepared batter and pour into prepared slice pan.Bake: Bake for 30-35 minutes or until sponge springs back when lightly touched in the centre. Allow to cool in pan for 5 minutes prior to inverting onto cooling rack. Once completely cooled, cut sponge in half horizontally to produce two even layers.Coffee Mix: Place coffee mix into a jug and add 250mL boiling water. Mix with a fork until dissolved and allow to cool for 10 minutes. Mascarpone Layer: To a small mixing bowl add mascarpone filling mix and thickened cream. Mix with an electric mixer on low speed until combined. Mix on High speed until soft peaks form taking care not to overbeat.Assemble: Place one baked layer into slice pan, cut side up. Pour half the prepared coffee mixture evenly over the sponge then spread half the mascarpone mixture over soaked sponge. Place the second layer, cut side up over the first, and repeat coffee and mascarpone steps. Optional: Dust the top of the tiramisu with sifted cocoa powder. Chill for at least 1 hour before serving.
